Scallion pancakes are one of those breakfast foods that just reminds me of home. It’s a once-in-a-while sort of thing because it can get pretty greasy, but sometimes when you’re feeling down you just need to make something nostalgic.

  1. Mix 1 cup all purpose flour and 1/2 cup hot water.
  2. Knead into dough and let rest for half an hour to develop gluten.
  3. While you wait, chop scallions.
  4. Divide dough in half.
  5. For each half, flatten with a rolling pin, then brush with oil and add salt and scallions.
  6. Tightly roll it up into a tube, then form it into a spiral and flatten again into 6” diameter or thereabouts.
  7. Cook 3 minutes each side on medium heat.
