Scallion pancakes are one of those breakfast foods that just reminds me of home. It’s a once-in-a-while sort of thing because it can get pretty greasy, but sometimes when you’re feeling down you just need to make something nostalgic.
- Mix 1 cup all purpose flour and 1/2 cup hot water.
- Knead into dough and let rest for half an hour to develop gluten.
- While you wait, chop scallions.
- Divide dough in half.
- For each half, flatten with a rolling pin, then brush with oil and add salt and scallions.
- Tightly roll it up into a tube, then form it into a spiral and flatten again into 6” diameter or thereabouts.
- Cook 3 minutes each side on medium heat.
